Recipes: grilled fruit desserts

CHARLOTTE, NC (WBTV) -

Robert Adler of Ernie's Smokehouse visited WBTV News Saturday Morning to share his recipes for three summertime desserts you can make on the grill.

Grilled Blueberry and Peach Cobbler

Fruit prep

Boil enough water to cover the peaches when you put them in.

Place 6 peaches into the boiling water for 30 seconds then put into an ice bath. The skin will then easily peel, then cut in half and take out the pit. They will be slippery when peeling so do it over the sink or in a bowl

Grilling

Preheat grill to 350 degrees for 10-15 minutes.

Oil the grill grate. Baste both sides with a little olive oil and grill both sides 4 minutes or so until lightly browned. Let cool then slice into wedges. Melt 4 tbsp. butter and in a separate bowl combine 4 tbsp. light brown sugar and /21 tsp. cinnamon (do this twice, once for the fruit and once for the granola).

Gently toss one batch of the butter mixture with the peach wedges and brown sugar/cinnamon, and toss in h cup blueberries.

Toss the other butter mixture with /21 cup of granola.

Place in cast iron pan and onto the grill for 15-20 minutes.

Option to add some wood smoke for a campfire flavor. Get the wood smoking before placing the pan on the grill.

Scoop and serve with vanilla bean ice cream. Drizzle with caramel sauce.

 

Grilled Watermelon Martini

Watermelon prep

1. Cut 1 1/2 inch thick slices, then half, then half again, so you have 4 quarters per

slice

2. Lightly sprinkle with salt on both sides

3. Place on rack and let drain for 30-45 minutes

4. Quickly rinse the salt off an pat dry with a paper towel

Grilling 

1. Preheat grill to high up to 450 degrees.

2. Lightly brush both sides with olive oil

3. Grill 2-3 minutes per side. You just want to have grill marks on both sides, enough time to get a little of the grill flavor onto the watermelon but not long enough to cook the fruit.

4. Remove from grill, sprinkle lightly with Kosher or Sea Salt.

5. Let cool a few minutes to room temperature.

Martini

Cut watermelon off the rind.

Place in blender and quickly blend. Option to add in some berries while blending. If you don't want a pulpy martini then strain the mixture.

Pour into drink mixer.

Add 1-2 shots of favorite flavored vodka

Add 1 shot of lemon simple syrup (1 cup water boiled with 1 cup sugar until dissolved with lemon juice added, then cooled)

Add ice, shake well, and serve in martini glass with piece of watermelon on the side of the glass.

 

All American Fruity Kabob Cones

Fruit/baste prep

1. Cut bananas into 1/2 inch slices and cut the strawberries in half.

2. Skewer the fruit being careful to not tear the flesh. Keep a little space between fruit pieces. I suggest using 2 skewers for each so the fruit won't spin on the skewer when turning.

3. Melt 1/2 cup margarine and add cup of favorite honey and a sprinkle of brown sugar. Keep on low for 5 minutes until all ingredients are fully mixed together.

4. Baste the skewers with the margarine/honey mixture

Grilling

1. Preheat grill to 350 degrees for 10-15 minutes.

2. Oil the grill grate

3. Grill 4-5 minutes then turn and grill for another 4-5 minutes until the fruit is slightly softened and the sugars start to caramelize.

4. Remove from grill, let stand for a minute to cool.

5. Slide fruit into a sugar cone, top with whipped cream and blueberries.

6. Option to add chocolate or caramel sauce.

Pound cake option

Instead of using a sugar cone cut pound cake into 1/4 inch slice, baste both sides with the margarine mixture.

2. Grill for 2-3 minutes on each side turning 45 degrees after 1 minute to get nice grill marks.

3. Serve the fruit on top of the cake, top with ice cream and chocolate or caramel sauce and a few blueberries.
