A neighborhood restaurant is looking to expand in parts of North Carolina, including here in Charlotte.
Saturday morning, Ric Scicchitano talked about the growth of "Corner Bakery Cafe" and made a recipe for Garden Gate Scrambler.

RECIPE: Garden Gate Scrambler
2 – 3 Large eggs – cracked or ½ to ¾ Cup egg whites
2 – 3 Tbsp. Dairy – optional we use a combination of ½ & ½ and milk (you could substitute water)
Salt & Pepper – to taste
1 Apple Chicken Sausage Patty – diced ½ inch
2 Whole Mushrooms – sliced
1 Tbsp. Red Bell Pepper – diced
½ Cup Spinach – destem
2 – 3 Tbsp. Cheddar Cheese – shredded
Heat sauté pan over medium high heat
Crack eggs in a bowl and whisk with dairy, salt & pepper
Spray pan and add the sliced mushrooms and diced sausage to the pan - sauté until the sausage browns and the mushrooms begin to sweat
Add the red pepper and spinach and stir together
Add whisked eggs and scramble
