Fresh Peach Salsa

5 ripe peaches, peeled and diced 1/2 inch in size

1/2 Bell Pepper diced (red or green)

1 small jalapeno pepper, diced fine, seeds and ribs removed

1/4 cup chiffanade fresh basil

1/4 cup fine diced red onion

1/4 cup shaved scallions

Juice of 1 lime ( aprox 1/4 cup)

Combine all ingredients in a medium size mixing bowl mix well, not breaking up peaches though. Cover and refrigerate for 1-2 hours. Serve atop grilled chicken or your favorite seafood item.  Enjoy!!
