Pan Roasted Grouper

* 6oz       Grouper filet

* 1ea       Vine Ripened Tomato - cut in 6

* 6 ea      Cherry tomato - halved

* 1 ea      Avocado - cut in 8

* 1 ea      Grilled Vidalia Onion, sliced thin

* 2 tbl     Lime juice

* 1 tbl     Lemon juice

* 2 oz      Olive oil - extra virgin

* 8 ea      Basil leaves – torn

* 1 Tbsp Micro Basil

* Maldon sea salt and black pepper


1. Sear the Grouper over medium high heat in a heavy bottom sauté pan for eight to twelve minutes, flipping over after  seven minutes. Remove from the pan and keep warm.

2. Combine all remaining ingredients together, season with salt and pepper and toss to combine

3. Allow to sit at room temp 10 minutes before serving

4. Place the Tomato salad in the center of an entrée plate

5. Top with the seared Grouper and garnish with micro greens
