Recipe: Southern Redneck Caviar

CHARLOTTE, NC (WBTV) - Southern Redneck Caviar

2 (16 ounce) cans black-eyed peas

2 (10 ounce) cans shoe peg corn, drained

2 (10 ounce) cans diced tomatoes, drained

1 (16 ounce) can black olives, sliced

1 green pepper, diced

1 red pepper, diced

1 can (16 ounce) black beans, drained

1 red onion, diced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1 teaspoon chili powder

1/2 bunch fresh cilantro, chopped

1 cup red wine vinegar

1/2 cup extra virgin olive oil

Kosher salt, to taste

1/4 cup granulated sugar

Mix all ingredients together and let marinate for a minimum of 8 hours. 

Serve with pita points, toasted bread or tortilla chips.
