Kindred's Ham & Cheese Sandwich

4oz Black Forest ham

1 slice of thick-cut Texas toast

3 slices Gruyere cheese

1/2oz whole grain mustard

1/2oz mayonnaise

1/2oz shallot

1oz butter

1oz fresh greens

1 tsp olive oil

salt & pepper to taste

1.     mix together the mayo and the mustard

2.     in a non-stick saut√© pan over medium heat add half the butter and brown the bread on one side

3.     add the other half of the butter and toast the other side of the bread

4.     remove the bread from the pan and add the ham

5.     cook the ham until it is warm all the way through

6.     top with cheese and allow the cheese to melt

7.     in the mean time spread the mayo mustard mix over the bread

8.     add the ham/cheese on top of the toast

9.     toss the shallot, greens, oil, salt, and pepper together and place them atop the ham sando.
