Recipe: Sweet Potato Cheesecake - Dining Series Competitor

Got to Be NC Competition Dining Series competitor stops by WBTV News Saturday Morning. Chef Joseph Cornett of The Flipside Cafe in Fort Mill shared a recipe for Sweet Potato Cheesecake.

Chef Joseph Cornett won his first and second battles, knocking out Jon Ernst of Café Monte French Bakery and Bistro and Chris Coleman of The Asbury. Chef Joseph Cornett competes in his next battle Tuesday, May 5, 2015 against Ben Miles of BLT Steak.

Sweet Potato Cheesecake

Chef Joseph Cornett of The Flipside Cafe

Ingredients:

* 2 large eggs

* 1# cream cheese

* 1 baked sweet potato

* 1/2 tablespoon vanilla extract

* 2 cups sugar

* 1 cup graham cracker crumbs

* 1 pinch of salt

Equipment needed:

* Food processor

Method:

Combine all ingredients except for the eggs and graham cracker crumbs in a food processor. With the food processor running, add your eggs one at a time. Once the batter is ready, sprinkle graham cracker crumbs in a cake pan and pour the batter over top. Bake at 325 degrees for 20 minutes or until set.
