Recipe: Oyster Pie

Oyster Pie

Ingredients:

* 1 c. celery (sliced)

* 2 c. onion (diced)

* 1 c. red pepper (diced)

* ½ c. green pepper (diced)

* 1 c. carrot (sliced)

* 2 T. whole butter

* 2 T. AP flour

* 1 pt cream

* 1 qt milk

* 1 can clam juice

* 1 qt oysters +liquor

* Sachet (1 ea. Bay leaf, 2 ea. Sprig thyme, 4 ea. Peppercorns, 1 ea. Garlic clove (smashed))

Method:

1. Render bacon in butter

2. Sweat all vegetables

3. Add flour and stir well cook 2 min for roux

4. Add liquids and sachet simmer 30 min to 1 hour

5. Add oysters to finish, cook 5 min
