RECIPE: SHEPHERD'S PIE

Ground Lamb ……………………………………...……….. 2 LB

Yellow Onion (diced)……………………………..……… ½ Each

Leeks (sliced/white part only)………………………. 1 Each

Garlic (chopped)…………………………………………… 1/2 Tbsp

Carrots (diced)……………………………………………… 1 Each

Peas……………………………………………………………… ½ cup

Chicken Stock………………………………………….…….. 2 cups

Tomato Paste……………………………………………....... 1 Tbsp

Worcestershire……………………………………………... 1 tsp

Parsley………………………………………………….………..1 Tbsp

Rosemary……………………………………………………….1 tsp

Thyme…………………………………………………………....1 tsp

Mashed Potatoes……………………………………………. 2 cups

Salt & Pepper…………………………………………………. To Taste

Flour………………………………………………………….….. 2 Tbsp

Olive Oil………………………………………………………… 2 Tbsp

Heat pot with oil on medium-high heat

Add ground lamb, leeks, garlic, and onion

Cook until lamb is browned

Drain fat in colander

Add flour and mix well

Add stock, tomato paste, Worcestershire

Add peas and carrots

Bring to a boil and then simmer for 45 minutes

Add fresh herbs

Pour mixture into a baking dish

Top with mashed potatoes

Bake at 400 degrees until potatoes are slightly browned

Yield: 4-6 Servings
