Pimiento Cheese

2 quarts shredded Cheddar
8oz cream cheese
4 roasted peppers, small dice
2 quarts shredded gruyere
3 cups mayonnaise
1 Tbsp fresh ground pepper
1 Tbsp Kosher salt
2 tsp granulated garlic
1/4 tsp cayenne

Combine & mix cheeses thoroughly.
Combine remaining ingredients & mix thoroughly.
Add wet mix to cheeses & mix by hand until homogenized.

Tomato Jam

4 quarts diced tomatoes
2 yellow onions, diced
2 Tbsp garlic, minced
1# brown sugar
1/4 cup Worcestershire
1 qt apple cider vinegar
1 cup strong coffee

Gather all ingredients and combine in a large sauce pot.  Bring ingredients to a boil.  Reduce heat and simmer for 45 minutes.  Remove from heat and cool on a sheet pan.  Transfer to an appropriate container.
