Makes 8 granola bars
1 cup rolled oats
¼ cup wheat flour
½ cup honey or corn syrup
½ cup peanuts
½ cup peanut butter
1 cup rice cereal
2 cups semi-sweet chocolate divided
Use 1 cup to melt in a microwave safe bowl. Melt in 30 second increments.
Set aside once melted.
Mix rolled oats, wheat flour and honey together. Set aside.
Fold in stages peanuts, peanut butter, rice cereal, and 1 cup chocolate chips. Mix well.
Place granola mix in an 8 x 8 square baking pan with parchment paper lining the bottom and sides.
Refrigerate for 30 minutes.
To remove the granola and cut.
Gently with a butter knife loosen up the side of the pan from the granola.
Pull the granola up by the parchment paper and place on a flat surface.
