Carrots (peeled and rough chop)……………………………………………..   2 Each

Yellow Onion (rough chop)…………………………………………………….      ½ Each

Garlic (chop)…………………………………………………………………………..      1 Tbsp

Celery (rough chop)…………………………………………………………………… 1 Stalk

Water……………………………………………………………………………………….    2 cups

Guinness……………………………………………………………….………………….   1/2 can (drink the rest!)

Beef Stock………………………………………………………….………………………  2 Cups

Chicken Stock…………………………………………………………………………….  1 Cup

Worcestershire………………………………………………….………………………. 1 Tbsp

Fresh Thyme…………………………………………………………….……………..    6 Stems

Season ribs with Salt, Black Pepper, Paprika and Garlic Powder

Sear in crock pot on HIGH heat on all sides until browned

Remove ribs and add veg

Brown veg, add ribs and liquid

Cover and cook on MEDIUM heat for 8 hours

Remove ribs from pot

Strain gravy

Put gravy in a pot and bring to a boil

Turn heat to medium and reduce until thickened

Gravy should coat the back of a spoon

Serve with cheddar grits and roasted baby carrots

Makes four servings.
