Salmon Croquettes with Poached Eggs & Herb Butter

2 fillets canned salmon, flaked
1 egg, beaten
1/4 cup red onions, diced
1/4 cup bell peppers, diced
1/2 cup flour mixture
1 TBSP crushed red pepper flakes
1 tsp of smoked paprika
1 TBSP of parsley, chopped
1/2 cup bread crumbs
4 TBSP of vinegar for poached eggs
Vegetable oil, for frying
Over medium heat, heat oil in a medium skillet. Combine salmon, beaten egg, all seasonings, peppers & onions and 1/4 cup bread crumbs. Form into patties and dust with additional bread crumbs, and flour mixture.  Fry until golden brown, about 2 minutes on each side.
