Chef Andarrio's Steak & Potato Casserole

1 lb red bliss potatoes
6 oz sirloin steak
1/2 lb andouille sausage
1 red pepper
1 yellow pepper
4oz Cajun seasoning
6oz sharp shredded cheddar cheese


Season potatoes with with salt, pepper and 4oz Cajun seasoning. Then mix in a bowl 4 oz olive oil. Place in a baking pan cook for 30 minutes on 350 degrees or until al dente.

Cut your steak into cubes. In a sauté pan place 2 oz of olive oil heat until it teaches smoke point then add your steak season with salt and pepper.

Then cut your andouille sausage into 1/2 inch wheels then add to your pan with steak turn heat down to medium. Then add your slices peppers

Once all ingredients are Cooked add to a baking pan then add cheese on top bake for 10 minutes ready to serve
