Recipes: Jerk Chicken Sliders & Asian Pork Tenderloin Sliders

1. Take boneless chicken breasts and cut in horizontally half with filet knife so the breasts are

even thickness.

2. Rub with peanut or vegetable oil

3. Season with favorite Jerk seasoning overnight

Other ingredients

1. Dice mango

2. Chill your favorite salsa (I prefer a habanero or chipotle salsa

3. Fresh chopped cilantro

4. Hard slider or water roll


1. Preheat grill to 400 degrees

2. Oil grill surface and place chicken on

3. When edges turn opaque turn over

4. Chicken is done at 160 degrees.


1. Chicken on the bottom

2. Top with salsa, mango, and cilantro

3. Serve immediately

Asian Pork Tenderloin Sliders

Pork Tenderloin prep

1. Marinate whole tenderloin for 1 day in your favorite Asian Marinade. I start with Yoshida's and add:

2. 1 tbsp. minced garlic

3. 1 tbsp. chili garlic paste

4. 1 tsp. lemon juice

5. Dash of Sriracha

6. ½ tsp. Hoisin


1. Slice fresh pineapple

2. Chop fresh cilantro

Cooking (gas grill)

1. Heat grill to 375 degrees

2. Either place on rotisserie or on the grill using indirect heat (not directly over the flame)

3. Baste tenderloin and turn every 15 minutes.

4. Exterior will develop a nice "caramelized" coating, the darker the better

5. When internal temperature reaches ----- degrees, take off the grill, cover with foil, and let stand for 5-

10 minutes.

6. Grill pineapple on high heat turning after 2 minutes or when you have grill marks

7. Slice pork thin and assemble on ciabatta or other hard slider buns with pineapple and cilantro
