Latin Pork Tenderloin with Spicy Strawberry Salsa

o    2 lbs of Pork Tenderloin (trimmed, rinsed and dried)

o    Season with:

o    ¼ tsp Kosher Salt

o    ½ tsp Black Pepper

o    ¼ tsp (Mexican) Oregano

o    ½ tsp Chili Powder

o    1 tsp Cumin

o    1 tsp Coriander

o    1 Tbsp Granulated Garlic

o    2-3 Tbsp of Canola Oil


1.    Season Pork and set aside

2.    Heat sauté pan to medium high temperature

3.    Add Canola Oil

4.    Sear Pork and cook until done or internal temperature of at least 140°F. Depending on thickness of pork – may need to finish cooking in oven at 350°F until done.

5.    Allow Pork to rest for about 5 minutes and cut. Top with Spicy Strawberry Salsa

Spicy Strawberry Salsa

o    12-15 Fresh Strawberries, cleaned, trimmed and diced in small pieces

o    ½ small Red Onion, finely diced

o    ¼ bunch of Fresh Cilantro Leaves, washed, dried and finely minced

o    1 Jalapeño, seeds removed, diced

o    Juice of 1 lime

o    Zest of ½ lime (optional)

o    Salt and Black Pepper (as needed)


1.    Mix all ingredients together, chill in refrigerator for 30 minutes and serve

o    3 Fresh Ripe Avocados

1.    Peel and cut avocados into small piece, mash and put in bowl

2.    Mix and stir in Salsa and lime juice with the avocados

3.    Serve
