Coconut Banana Pudding

1/2 cup sugar

1/3 cup cornstarch

1/2 tsp salt

3 cups coconut milk

3 tbs vanilla extract

20 vanilla wafers

Whisk together sugar cornstarch and salt

In a saucepan. Slowly whisk in milk and bring to a boil over medium heat.

Lower heat and simmer whisking until mixture thickens 3-4 minutes.

Remove from heat and whisk margarine and vanilla. Cool.

Layer wafers pudding and bananas in round glass bowl. Finish with pudding on top. Cover with plastic wrap and chill overnight.
