Mini BLT Cups

Yield 12 servings

Ingredients

·         24 grape tomatoes

·         24 small pieces of “soft” lettuce

·         ½ pound of bacon (cooked to desired texture)

BLT cups Instructions:

1.       Cut off one end of the tomato bottoms with a melon baller or 1/8 tsp remove inside of tomato. Be sure to remove the membrane and seeds

2.       Invert tomatoes on a plate to allow excess juice to drain.

3.       Stuff 1 piece of lettuce into tomato cup.

4.       Then place teaspoon of bacon on top of lettuce.

5.       Top chipotle aioli and bacon for garnish.

For the chipotle aioli:

·         1 cup mayonnaise

·         2 tablespoons finely chopped chives or red onions

·         2 minced garlic cloves

·         2 teaspoons fresh lime juice

·         1 teaspoon chipotle hot sauce

·         Salt and pepper

Instructions:

1.       Whisk mayonnaise with garlic, lime juice, and chipotle hot sauce to taste.

2.       Season with salt and pepper; chill until ready to serve.

3.       Garnish with onions

1.       Make a bunch because these are addictive and easy to consume 3-4

2.       Dish can be made in advance

3.       All ingredients can be prepped and prepared the night before

4.       Choose grape tomatoes that are evenly shaped

5.       Chipotle Aioli adds that spicy kick for a more vibrant bite

·         Cherry – bright dose of tomato flavor with a sweet and slightly sour flavor.

·         Grape tomatoes in winter months they are typically shipped in from Mexico and have a much durable skin and travel better. Have a meatier texture.
