Brown Butter Bacon Bourbon Sweet Potatoes

Ingredients

8 cups sweet potatoes, roasted

2 cups bacon cut in small pieces

½ cup butter, melted

½ cup brown sugar

1 T kosher salt

2 T Bourbon

½ cup candied pecans



Directions

  2. class="MsoNormal" style="color:black;mso-margin-top-alt:auto;mso-margin-bottom-alt: auto;line-height:15.75pt;mso-list:l0 level1 lfo1;tab-stops:list .5in">Using a small paring knife, insert small slits into each sweet potato 8 times.
  3. class="MsoNormal" style="color:black;mso-margin-top-alt:auto;mso-margin-bottom-alt: auto;line-height:15.75pt;mso-list:l0 level1 lfo1;tab-stops:list .5in">Place on sheet tray in oven for 45 minutes.
  4. class="MsoNormal" style="mso-list:l0 level1 lfo1;tab-stops:list .5in">While sweet potatoes are cooking cut bacon into small pieces and place in sauté pan over medium heat.
  5. class="MsoNormal" style="mso-list:l0 level1 lfo1;tab-stops:list .5in">Cook bacon until crispy and remove bacon from pan. 
  6. class="MsoNormal" style="mso-list:l0 level1 lfo1;tab-stops:list .5in">When sweet potatoes are finished, remove from oven slice in two and scoop out flesh into medium size mixing bowl. 
  7. class="MsoNormal" style="mso-list:l0 level1 lfo1;tab-stops:list .5in">Add only 1 cup of bacon, melted butter, brown sugar, salt and bourbon. 
  8. class="MsoNormal" style="mso-list:l0 level1 lfo1;tab-stops:list .5in">Mix until well combined.  Place into casserole dish and garnish with other cup of bacon and candied pecans.
  9. class="MsoNormal" style="mso-list:l0 level1 lfo1;tab-stops:list .5in">Place in 350° oven for 30 minutes until warmed through and serve.
