Brown Butter Bacon Bourbon Sweet Potatoes

8 cups sweet potatoes, roasted

2 cups bacon cut in small pieces

½ cup butter, melted

½ cup brown sugar

1 T kosher salt

2 T Bourbon

½ cup candied pecans


  1. Preheat the oven to 425°F. 
  2. Using a small paring knife, insert small slits into each sweet potato 8 times.
  3. Place on sheet tray in oven for 45 minutes.
  4. While sweet potatoes are cooking cut bacon into small pieces and place in sauté pan over medium heat.
  5. Cook bacon until crispy and remove bacon from pan. 
  6. When sweet potatoes are finished, remove from oven slice in two and scoop out flesh into medium size mixing bowl. 
  7. Add only 1 cup of bacon, melted butter, brown sugar, salt and bourbon. 
  8. Mix until well combined.  Place into casserole dish and garnish with other cup of bacon and candied pecans.
  9. Place in 350° oven for 30 minutes until warmed through and serve.
