Sweet Potato and Honeycrisp Apple Hash

2 Peeled and Diced Sweet Potatoes
1/4 Stick of Butter
1 Diced Honeycrisp Apple
2 Tbsp. Small Diced Red Onions
4 Tbsp. Small Diced Red Bell Peppers
Salt & Pepper

In a large sauté pan, place a small amount of water to just cover the bottom. Add potatoes and simmer until tender and pan is dry. Add butter and allow to melt. Add onion, and peppers, and a touch of salt and pepper. Cook until tender. Add apples, let apple cook 3-4 minutes and serve.
