Preparing Charming Mini Pies this Thanksgiving

Mini Pies look charming, allows guest to get their fill without overindulging. Stacey Ann of Gypsy Soup stopped by WBTV News Saturday Morning to share a few holiday recipes you can make this Thanksgiving.

Mini Apple Pies

8 large granny smith apples 1 lemon, juiced ½ cup brown sugar ½ cup granulated sugar 2 Tablespoon flour 1 cup golden raisins ½ teaspoon cinnamon ¼ teaspoon cloves ¼ teaspoon nutmeg ¼ teaspoon mace 2 Tablespoons butter 12 mini pie crust

1. Peel and slice apples, place in large bowl

2. Add all ingredients and stir well

3. Spoon into pie crust, overfilling each one

4. Top with crust, make a slit in each

5. Bake at 350 for 50 minutes

Mini Cranberry Pyhllo Cups

1 package of phyllo dough sheets 2 cups fresh cranberries 3 large apples ½ cup brown sugar ½ cup granulated sugar 2 Tablespoons flour ½ teaspoon cinnamon ¼ teaspoon nutmeg 1 Tablespoon orange peel 2 Tablespoons butter

1. Cut Phyllo dough into squares, fit into muffin tins.

2. Place 4 layers into each muffin cup

3. In food processor, chop cranberries

4. Peel and slice apples, place in bowl

5. Add cranberries

6. Add remaining ingredients

7. Stir well

8. Spoon into each muffin cup

9. Bake at 350 for 50 minutes

Mini Pumpkin Pies

4 unbaked pie shells 15 oz. of pureed pumpkin 1 cup sugar 1 teaspoon cinnamon ½ teaspoon ginger ¼ teaspoon cloves 3 eggs 1 ½ cups heavy cream

1. In a large bowl mix pumpkin and sugar

2. Add seasonings, mix

3. Beat in eggs

4. Add cream, beat 1 minute

5. Pour into pie crusts

6. Bake at 425 for 15 minutes

7. Reduce heat to 350, bake for 30 minutes
