CHARLOTTE, NC (WBTV) - If you want to cook with shellfish, why not use varieties that come straight from the waters off the Carolina coast?
Jim Seidel from Carolina Fish Market visited WBTV News Saturday Morning to show off some of the unique shellfish that call the Carolinas home and shared some ideas for cooking it.
WBTV Golden Tilefish Recipe
8oz piece golden tile
1/2 c kale -torn into pieces
1/4 c cherry tomatoes – halved
1/4 c artichoke hearts – quartered
1 T butter
1/4 c white wine
1/4 c chicken stock
1 T fresh oregano
1 t garlic Salt and pepper
EVOO (extra virgin olive oil) to drizzle
Preheat oven to 375. Get all ingredients together and prepped out. Place kale, tomatoes, artichoke hearts, garlic in a bowl and season with salt and pepper. Place all ingredients from bowl into parchment paper. Add the butter cubes, white wine and chicken stock. Season your fish with salt and pepper. Place the fish on the ingredients. Drizzle the fish with some olive oil and sprinkle the remaining oregano on top. Bundle and scrunch the parchment paper completely closed. Place in oven for 12-15 minutes. Enjoy!
