Nacho Shrimp Bites

Ingredients:
o   

24 large – medium size raw shrimp, shelled and deveined

o   

3 Tbsp Olive Oil

o   
½  tsp Chili Powder
o   
½  tsp Salt
o   

½ tsp Black Pepper

o   

1 tsp Granulated Garlic

o   

2 Avocados

o   

¼ bunch of Fresh Cilantro, minced

o   

1 Juice of Fresh Lime

o   

½ Zest of Fresh Lime

o   

1 jalapeño pepper, small diced

o   

½ bunch fresh cilantro, minced

o   

1 small shallot thinly sliced

o   

5 Cherry tomatoes, seeded, cut into quarters

o   

Salt and Black Pepper to Taste

o   

½ cup Sour Cream

o   

24 Tortilla Chips

Directions

:

1.   

Season Shrimp liberally chili powder, salt, pepper, granulated garlic

2.   

Heat sauté pan, add olive oil and sear shrimp until done.

3.   

Cut open fresh Avocado; remove pit and cut into small dice, place in a bowl. Add fresh lime juice, diced jalapeño pepper, fresh cilantro, salt and pepper to taste.

4.   

Toast nacho shells (optional). Fill half with sour cream; fill the other half with avocado mixture and shallots. Top with seared shrimp, garnish with cilantro leaf, top with tomato slice.

Serve, hot or cold
