12 Hour Short Rib with Asher Blue and Red Wine Fondue

Asher Blue & Red Wine Fondue

2 Oz Blue Cheese

2 Oz Flour

4 Oz Red Wine

Bring wine to a boil.  Add mixed flour and blue cheese.   Simmer for 10 minutes and strain.

Sous Vide Short Rib          

1 # Chuck Flap                    

3 Oz Red Wine

3 cloves garlic

4 Sprigs of Thyme

Sear short rib.  Place in Cryo vac bag with remaining ingredients.  Set circulator for 177.7 degrees for 12 hours.
