Recipe: Salmon Patties with Ancho Agave Honey Butter

Salmon Patties with Ancho Agave Honey Butter

1 Pound Fresh Salmon

1/3 cup Roasted Red Peppers

2 Tablespoons Chives

1 1/2 Cups Japanese Bread Crumbs

3 Large Eggs

1/2 Teaspoon Salt

1/2 Teaspoon Pepper

Ancho Agave Honey Butter

1/2 Pound Butter (softened)

2 Ancho Chiles

2 Tablespoons Agave Honey

First place Ancho Chiles in a bowl and cover with water. Then place another bowl on top to keep chiles submerged and soak for one hour. Take chiles out of bowl, then remove stems and seeds. Place in a food processor with a little bit of the soaking liquid and puree until smooth. Put puree mixture in a bowl with Agave Honey and softened butter. Mix until every ingredient is evenly incorporated.

Take fresh Salmon and cut into small cubes. Then chop chives and small dice the roasted red peppers. Place salmon, chives, roasted red peppers, bread crumbs, salt and pepper in a large bowl. Crack the three large eggs into same bowl and fold all ingredients together.

Portion mixture into 4 ounce patties. Heat a pan with butter and sear Salmon Patties on both sides until golden brown. Place patties on a plate and drizzle with Ancho Agave Honey Butter.
