Recipe: P.E.I. Mussels steamed in white wine, tomato and lime

Prince Edward Island Mussels steamed in white wine, tomato and lime with hand cut French fries

1# Prince Edward Island Mussels, washed and cleaned

.5 teaspoon slivered garlic

.5 teaspoon minced shallot

.5 cup white wine

.25 teaspoon grated lime zest

.5 cup crushed Roma tomatoes

.5 cup heavy cream

splash of olive oil

8oz hand cut French fries seasoned with kosher salt and fines herbs


In a large saute pan with deep sides, add the slivered garlic and a splash of olive oil. put the pan over medium high heat. As the pan heats the garlic will start to cook and eventually lightly brown. Add the mussels and minced shallots and saute for a minute. Add the lime zest and deglaze with white wine. let the wine boil for a few seconds and add the tomatoes and heavy cream. Cover the pan and let steam for 3-4 minutes until all the mussels are open. transfer to a large bowl and serve the french fries on the side.
