Cooking with Tequila Recipes

On the Border stopped by WBTV News Sunday Morning to share a few recipes, including how to incorporate cooking with tequila.

Tequila Fruit & Melon Salad

The fruit:

1 Cup Blueberries

1 Cup diced strawberries

1 Cup diced Honeydew melon

1 cup Diced Mango

1 Cup, firm banana, diced

1 Cup diced Watermelon (hold this aside and refrigerate)

The dressing:

¼ cup chopped mint

¼ cup Agave Nectar

Juice from one lime

1 Tbsp Silver Tequila

¼ tsp salt

 

Combine all fruit – except watermelon – in a large bowl.

Separately, add all your dressing ingredients into your blender/food processor, and pulse a few times until mixed. Pour dressing over fruits, stir gently, and refrigerate for 1 hour. Just before serving, add your watermelon and gently stir one more time.

Serve as is, or top with a dollop of whipped cream. Also goes great on pancakes, crepes and waffles.

 

Watermelon Margarita

Sugar-rim your margarita glass

Add the following to your blender

o 1 medium scoop of ice (about a cup)

o ¾ Cup Margarita Mix

o 1.5 oz (1 shot) Tequila

o 1 Tblsp Triple Sec

o 1 Cup Watermelon chunks

o 1 Tblsp Grenadine (adds a little sweetness, and a nice red color)

Blend your ingredients until you have a "slushy" consistency. Pour into your sugared glass, and garnish with a fresh watermelon wedge.
