1 qt. shredded sharp white cheddar
1c fully strained and fine diced pimentos
1/4c cider vinegar
1/4c fine sliced scallion
1tsp cayenne pepper
1Tbsp kosher salt
1 clove garlic, finely minced
1tsp fresh lemon juice
Strain pimentos well, while you are shredding you cheddar, set aside.
Put 3/4 of the cheese in a mixing bowl and add the vinegar, salt, cayenne, scallion, garlic, lemon juice and honey. Add 3/4 of the mayo as well and mix.
Mix in pimentos next so not to make the color run as bad.
Add the remainder of the cheese and a bit more mayo to even out flavor and consistency.
