Recipes: Pit beef and cedar plank fish sliders

Baltimore Pit Beef Sliders

Buy a 3 lb. London Broil or Top Round. Season generously with the rub below.

Place in baking dish, refrigerate and let stand for at least 1 day.

You'll also need 1 sweet onion and 2 ripe tomatoes sliced thin, Iceberg lettuce, slider rolls, Horseradish sauce (below)

Beef rub

o 2 tablespoons seasoned salt

o 1 tablespoon sweet paprika

o 1 teaspoon garlic powder

o 1 teaspoon dried oregano

o 1/2 teaspoon black pepper

o Optional sprinkle with cayenne for some extra kick

Horseradish sauce

o 1 cup mayonnaise

o ½ cup prepared horseradish

o 2 tsp. lemon juice

o Salt and pepper to taste

Prepare a hot grill 400 - 450 degrees

If using charcoal set up two zones for direct and indirect. Grill beef indirect for 20 minutes turning after 10 minutes then direct for 5-10 minutes per side to sear the outside until crusty and dark brown.

Check internal temperature with instant read thermometer through center of meat (125 rare, 135 medium, 155+ for well done)

Transfer to a cutting board; let it rest 5-10 minutes.

Baste slider rolls with olive oil, sprinkle Kosher Salt, toast quickly.

Slice beef thinly across grain. Pile beef high, slather with horseradish sauce.

Garnish with onions, tomatoes and sliced lettuce. Serve with cold beer.

Cedar Plank Fish Sliders

Items needed

o Firm fish such as Mahi or Salmon

o Your favorite Asian marinade

o Fresh pineapple and rum

o Brown sugar

o Slider rolls

o Olive oil, Kosher or Sea Salt

o Soaked wood chips such as apple or cherry

Marinate the fish for 2 hours

Soak cedar plank for at least 2 hours in water, white wine, beer, or whatever flavor liquid you want to infuse into the fish.

Prepare a medium high grill 375-400 degrees.

If using charcoal set up two zones for direct and indirect.

Place plank on grill over indirect heat with fish on top.

Sprinkle with brown sugar.

If using wood chips sprinkle over hot coals or in smoker box.

When fish starts to "flake" it's done, about 20-30 minutes.

For caramelized pineapple,

o Slice fresh pineapple into ¼inch slices

o Soak in favorite rum for 1 day reserving the rum to drink later

o Sprinkle with brown or turbinado sugar

o Grill over direct heat turning after browning

Baste slider rolls with olive oil, sprinkle Kosher Salt, grill/toast quickly.

Place piece of fish with pineapple on top and a bit of the marinade.
