Recipe: Lemon & Ricotta Cheese Stuffed French Toast

CHARLOTTE, NC (WBTV) - Just in time for the Easter holiday, the Easter bunny has delivered a delicious recipe!

Sarah Schaeberg, Manager of Toast Cafe, stopped by WBTV Saturday morning to dish on the Easter Brunch special. The recipe below will be available throughout the holiday weekend.


Lime & Ricotta Stuffed French Toast: (Yields four servings, 2 "sandwiches" per serving.)


~16 pieces plain Texas Toast



~16 ounces ricotta cheese

~2 tbsp honey

~1 tsp vanilla

~Zest of one lime

Combine in medium mixing bowl


~Egg Bath: 

~6 eggs

~4 egg yolks

~2 cups half and half

~2 tbsp brown sugar

~1 tsp cinnamon

~1 tbsp vanilla

~1/2 tsp allspice

~1/2 tsp nutmeg

~1/2 tsp clove

Whisk until blended well in medium mixing bowl


~Take two slices of bread, spread 2 ounces of filling on one slice and sandwich the pieces together.

~Dip in egg bath for 2-4 seconds per side

~Place in 350 degree preheated griddle or pan 

~Griddle for 1-2 minutes each side, or until golden brown

~Slice in half, garnish with powdered sugar and pure maple syrup
