Italian Buttercream -- Ingredients:
¾ cup sugar
5 large egg whites
4 sticks unsalted butter, room temperature
1 ½ teaspoons vanilla
In a saucepan, combine ½ cup sugar and ¼ cup water. Cook without stirring until it reaches 230 degrees Fahrenheit.
While sugar is heating, place egg whites in a mixing bowl and whip with ¼ cup sugar to form medium peaks.
Continue to cook sugar until it reaches 240 degrees Fahrenheit. Then pour sugar syrup over egg whites while they mix on low. Continue to mix for 3 minutes or until they have cooled. Slowly add butter and vanilla and continue to whip until butter cream is light and fluffy.
