Competition dining series winner in the kitchen at Mimosa Grill


It has been a long and difficult competition.

Night after night, chefs from the top restaurants in the Charlotte area have battled it out in the Bonterra kitchen in the Fire in the City competition.

It is an Iron Chef-type battle with the secret ingredient (always a North Carolina product) revealed only in the few hours leading up to the battle.

At the end of it all, reigning supreme, was Chef Jon Fortes from Mimosa Grill.

The chef visited WBTV News Saturday Morning to talk about the competition and the next step he will take in the challenge.

He also shared the following recipe:

Sweet Potato Risotto

2 lbs                                                       Sweet Potatoes, ¼ inch dice

½                                                             Vidalia onion, ¼ inch dice

1 lb                                                         Parsnips, ¼ inch dice

2 cups                                                   heavy cream

1 T                                                          butter

3 oz                                                        maple syrup, grade "a"

¼ lb                                                        bacon, lardons

1 T                                                          Thyme fresh chopped

Salt and cayenne                             to taste


In a medium sauté pan render out the bacon and cook until crispy, remove from pan, but leave the rendered bacon fat. Add Butter and onions, sweat the onions until translucent. Add sweet potatoes, parsnips, and heavy cream and simmer until thick and creamy. Add in maple syrup and thyme.  Top with crispy bacon. This dish is great by itself, but works very well with things like pork, venison and lamb.
