Goat Cheese Spread with Fig Topping

Fig topping


2 cups Sliced fresh figs

2 cups Sliced shallots

1 tsp. Lemon zest

½ tsp. Fresh thyme

2 oz. Balsamic vinegar

Caramelize the shallots in a sauté pan until golden brown. Next, add in the sliced figs, thyme, and lemon zest and sauté briefly.  Add the Balsamic vinegar and reduce until the mixture is thick.

Herb goat cheese spread


10 oz. Goat cheese

½ T. Chopped parsley

½ T Chopped thyme

½ T. Sliced chives

½ tsp. Lemon zest

1 tsp. Salt

Combine all ingredients In a medium sized bowl.  Then, mix thoroughly with a fork until the herbs are spread evenly throughout the cheese.
