Chef at Fishmonger Seafood cooks up some easy and healthy dinners

MYRTLE BEACH, SC (WMBF) - Today on WMBF News at 4 p.m., Chef Louie Gelormini from Fishmonger Seafood stopped by to cook up some easy and healthy dinners. Here are recipes for two of the dishes he made:

Voodoo Shrimp

5 fresh local shrimp

2 tablespoons of sugar

2 tablespoons Cajun spice

1 tablespoon butter

2 tablespoons olive oil

  • Mix Cajun and sugar
  • Dredge shrimp in Cajun mixture
  • Sear shrimp in pan with butter and olive oil for one-two minutes on each side
  • Serve over bed of fresh greens

Pignoli Encrusted Diver Scallops

5 fresh diver scallops

½ cup pignoli nuts (similar to pine nuts)

2 tablespoons butter

2 tablespoons olive oil

¼ cup of sundried tomatoes

  • Crush pignoli nuts
  • Dip one side of scallop into nuts
  • Place scallop in pan with butter and olive oil
  • Flip scallop onto other side once browned
  • Cook scallop on each side for one to two minutes
  • Let scallops sit for a couple minutes once removed from pan
  • Throw scallops over angel hair pasta or linguini
  • Sprinkle sundried tomatoes over pasta and scallops
  • Top with preferred pasta sauce
