Recipe: Turkey burgers with grated zucchini and carrot

CHARLOTTE, NC (WBTV) - Chef Bruce Moffett of Barrington's Restaurant visited WBTV News Sunday Morning to share his recipe for an any-time-of-the-year favorite.

Turkey burgers with grated zucchini and carrot (Serves 4):

3/4 pound ground turkey

1 medium zucchini grated (squeeze water out)

1 medium carrot grated (squeeze water out)

2 cloves of garlic finely chopped

3/4 teaspoon dried thyme

3/4 sea salt

1/4 teaspoon black pepper

1 large egg

3 tablespoons olive oil

8 slices of crusty bread (2 for each sandwich)

*****Mayonnaise and Bibb lettuce, heirloom tomato slices to garnish crusty bread

In large bowl combine turkey, zucchini, carrot, garlic, thyme, salt, pepper and egg.

Form the mixture into 4 patties.

Heat tablespoon of olive oil in a large skillet over medium heat. Cook patties turning once until no trace of pink remains (4-5 minutes).

Toast crusty bread until brown and garnish with mayonnaise, Bibb lettuce and heirloom tomato.
