Veggie Burger with Bad Daddy's

Bad Daddy's Burger Bar came into our studio and made a veggie burger.

Ingredients for 6 Edamame Cashew burgers
2 1/2 cups edamame beans
2 1/2 cups garbanzo beans
1/2 cup to grind cashews whole unsalted nuts
4 teaspoons peeled garlic
1/2 tbl soy sauce
1 teaspoon cumin ground spice
1 tablespoon Salt & Pepper Mix
1 cup Cooked Mushrooms
1/2 cup chick pea flour
1/2 cup toasted, chopped cashews whole salted nuts
1/2 cup chopped edamame beans

Puree first 7 ingredients with immersion blender
Remove to bowl
Pulse additional cashews, edamame and mushrooms in food processor leaving very chunky
Fold in flour, chopped cashews, chopped edamame
Cover and refrigerate for 30 minutes
Form into 5 oz patties, 1 inch thick
Fry or grill

Tatziki Sauce
10 fl ounces play Greek yogurt
1/3 tbl roasted garlic
1 cup cucumber peeled and deseeded
1/2 tablespoon salt kosher spice
1/3 tbl chopped parsley
Ground black pepper to taste
