Recipe: Candied beet cocktail

CHARLOTTE, NC (WBTV) - Candied beets

For the beets:

2 large or 3-4 small organic beets, trimmed and peeled

Zest of 2 lemons and 1 orange

1 1/2 cups organic sugar

Peel and slice small beets in half, slice large beets into 1/2-inch thick rounds,

Combine the beets, citrus zest, sugar, and water in a medium saucepan. Bring to a simmer, stirring to dissolve sugar, then reduce the heat and simmer gently for 45 minutes to 1 hour until the beets are soft.

Transfer the beets and cooking liquid to a bowl or other container;  Let the beets cool in the liquid, then refrigerate until needed.

For  refreshing  summer holiday cocktail - Blend the beet syrup with vodka and splash of lime.
