Grilled Halibut with Mango Mint Salsa

4 Halibut Steaks (apprx

Mango Chuncks (Fresh or Frozen)

1 Jalapeño Seeded and Diced

1 Tbsp. Chopped Mint

1 Tbsp. Chopped Cilantro

Juice of 2 Limes

Salt and Pepper to taste


If using frozen Mangos, thaw

If using fresh Mangos, peel and cut into chunks

Toss Mango with Lime Juice, Mint, Cilantro, and Jalapeño

Add Salt and Pepper to taste

Let the Mango Salsa sit for a few mintues to let flavors marry together

Turn Grill on or Get Grill Pan Hot

Lightly Season Halibut with Salt and Pepper

Grill 2-3 Minutes per side and cook until firm or internal temperature reaches 145* F

Grilled London Broil

2lbs London Broil

1 Cup Canola Oil

½ Cup Balsamic Vinegar

5 Gloves Garlic, Chopped

2 Tbsp. Italian Herb Mixture

Salt and Pepper to taste


Mix together oil, vinegar, garlic, herb mixture, salt and pepper.

Marinate London Broil for no less than 2 hours

Turn Grill on or get Grill Pan hot

Cook 2-3 Minutes Each Side

Cook until internal temperature reaches 135*F (Medium Rare)

Grilled Spring Onion and Asparagus Salad

1lb Mixed Greens

6 Baby Spring Onions

1 Bunch Grilled Asparagus

1 Bunch Beets (Can used canned Beets)

White Wine Vinegar

Lemon Juice

Extra Virgin Olive Oil

Salt and Pepper to ATaste


If using Fresh Beets, boil, peel, and cool

Grill Spring Onions and Asparagus until Just Colored and slightly Tender

Mix together White Wine Vinegar, Lemon Juice, E.V.O.O., Salt and Pepper

Toss Everything together and garnish with extra pieces of onions, Asparagus, and Beets
