Sensational Spring Salad

Yield:  4 servings

 

Ingredients:

1 pint of cherry tomatoes (halved)

1/4 cup of yellow peppers – thinly sliced

1/3 cup julienned red onions

1/4 cup of sliced red apple

1/3 cup of thinly sliced cucumber (de-seeded)

1/4 cup of fresh squeezed orange juice

1/3 cup of crumbled goat cheese

1 tsp of sea salt

1/3 tsp of ground black pepper

½ tsp of sugar in the raw

1 tsp of chives for garnish

Procedure:

1) In a medium sized salad bowl add halved tomatoes

2) Next add red onions, yellow bell peppers, and sliced cucumbers

3) Add sliced apples and the ¼ cup of fresh squeezed orange juice

4) Add crumbled goat cheese, sea salt, black pepper, and sugar to mixture

5) Mix very well and ENJOY!

6) Serve on top of your favorite toasted baguette

 

In a large bowl combine one pint of halved cherry tomatoes

Next add julienned yellow pepper slices and julienned red onion
