Smothered Fried Pork Chops with Nana's Southern Gravy
2 each 8 oz. bone end pork chops center cut
6oz Nana's gravy
2oz sauteed yellow onions
seasoning flour
blend oil
Seasoning Flour
3 cups all purpose flour
3/4 oz. seasoning salt
1/2 oz. black pepper
1/2 oz. garlic powder
Nana's Gravy
1/2 gallon beef stock
1/2 butter
2 cups flour
4 oz. gravy mix
pinch of salt, pinch of pepper as needed
1. Pound out both pork chops and let rest
2. Make your seasoning flour and mix well
3. Begin your gravy and mix everything together but the flour. Let it boil down a little then fold in flour. If too thick, add more stock. Adjust seasoning. Let simmer for 30 minutes then strain.
4. Put oil in the skillet and let it get hot. Lightly put the chops in seasoning flour. Pan fry about three minutes each side and drain fat. Pour gravy over chops in pan and let smother in gravy.
5. Serve and top off with sauteed onions and tomatoes.
