Making Risotto Fritters

CHARLOTTE, NC (WBTV) - Chef Michael Bowling stopped by WBTV Saturday morning to show us how to make Risotto fritters.

He says it's pretty easy to make.

Risotto Fritters

2 Cups Whole Milk

1 Cup Heavy Cream

! Vanilla Bean

1/4 Cup Sugar

1/2 Cup Aborrio Rice

1/2 tbsp butter

Orange Zest

1 cup Panko

1 cup Pine Nuts

1 cup ap flour

egg Wash



place Milk , Heavy Cream, Scraped Vanilla Bean , Sugar, rice, butter and ,orange zest

in a heavy bottom pot and bring to a boil, stirring on a regular basis ,,Try not to let mix stick to bottom but it does do not scrape .

in a food processor mix nuts and Panko ,, place in bowl ,, after mix has cooked absorbing 90% of liquid place a sheet tray to cool . After cool form into 1-2oz balls . then coat in order ,,1/ flour 2/ egg wash / 3 Pinenut mix ..

 then either deep fry ( my fav) or bake in oven at 400 for 7 min
