CHARLOTTE, NC (WBTV) - When having guests over for dinner, you want to impress them with your culinary skills. However, you probably don't have as much time as you'd like to really go wild in the kitchen.
On WBTV News Saturday Morning, culinary expert Heidi Billotto shared a recipe for a spice-rubbed, smokey fish entree that is easy to make but when served looks like you spent hours in the kitchen.

BBQ Bacon-Wrapped White Fish
Recipe by Charlotte Culinary Expert, Heidi Billotto
1 lb. tilefish, halibut or cod, or other white fish cut into ¼ lb. serving pieces
Your favorite BBQ dry rub from the Savory Spice Shop or mix up a blend of
1 Tbsp. Savory Spice Shop lodo red adobo
1 Tbsp. Savory Spice Shop Tomato Powder
1 Tsp. Savory Spice Shop vanilla powder
1 tsp toasted Savory Spice Shop cumin seeds, crushed
1 tsp. toasted Savory Spice Shop coriander seeds
1 Tbsp mixed Savory Spice Shop brown and yellow mustard seeds, toasted and crushed
1 Tbsp.demarara sugar
1 tsp, salt
Pinch of Savory Spice Shop powdered Hickory Smoke
Local bacon
Coat tile fish or any other white fish generously with the BBQ rub. Wrap fish in bacon or pancetta. Sprinkle with a bit more of the rub Place on rack inserted over a baking sheet with sides. Bake in a 375 degree oven about 30-40 minutes or until bacon is crispy and the fish is flaky white.
