Chef Josh Cain from Bar Cocoa at the Ritz visited WBTV News Sunday Morning to share his recipe for a delicious apple cobbler. The recipe is below. Enjoy!
2 oz Butter
5 lbs Apples, peeled and sliced
8 oz Granulated Sugar
1 tsp Cinnamon
1 ea Lemon, juice only
4 oz Raisins
Toss sliced apples with lemon juice and sugar. Melt butter over medium-high heat in sauté pan. Add apples and cook for 1-2 minutes. Add cinnamon and continue to cook for 3-5 minutes. Add raisins and cook for 2-3 minutes until apples are almost cooked through. Pour into baking vessel and allow to cool.
1 cup Granulated Sugar + 1 tbsp
1 stick Unsalted Butter
1 cup Heavy Cream
Cook butter and sugar over medium heat until dark amber in color. DO NOT STIR. Remove from heat and add cream slowly, whisking to incorporate. Strain and cool. Store in an airtight container in the refrigerator.
1 lb Butter, melted
1½ lbs Granulated Sugar
¼ oz Cream of Tartar
¾ oz Baking Soda
4 ea Eggs, Beaten
1 ½ lbs Cake Flour
Combine all dry ingredients in a medium size mixing bowl. Add eggs until incorporated. Add melted butter and mix until combined. Allow dough to rest in refrigerator for 1-2 hours. Shape dough to cover fruit. Bake at 350◦F until golden brown.
