Unfried Fish


2 large zucchini (sliced thin with a mandolin)


1 cup olive oil

1/2 lemon juiced

2 cloves garlic minced

2 T minced onion (fresh not dried)

1 T paprika

1 T shredded seaweed

1 level teaspoon kelp


1 cup sunflower seeds

1/2 cup flax seed

2 T nutritional yeast

1 T Old Bay

1 t kelp powder

1/2 t cayenne pepper

2 T shredded seaweed


Put all of your marinade items in a shallow bake dish and mix well.  Lay your thinly sliced zucchini strips in the marinade and let sit to the side for now.  Put your sunflower seeds and flax seeds in the blender and grind until they become like a flour.  This is your seed flour.  Pour your seed flour into a large bowl and add in the remaining ingredients of your batter.  Mix well.   Take one zucchini strip from the marinade mixture.  Be very gentle with them so they do not tear, but you want to make certain that each strip gets full marinade for a few minutes.  Take your strips one by one to the batter bowl and make certain to allow the marinade oil to drain off as much as possible so you don't get the batter too oily.  Too much oil in the batter will make it difficult to dehydrate.  Batter each strip on both sides.  This is your fish.  Now place your fish in the dehydrator at 110 degrees overnight and you will have unfried fish first thing in the morning.

Seafood Pate Salad (tuna)


2 lb bag of carrots (peeled and juiced)

1 T Old Bay

1/4 cup minced onion

1/4 cup minced green pepper

2 stalks celery (finely chopped)

2 T kelp powder

3 sheets Nori seaweed (shredded in a blender)

1 cup Veganaise


After peeling and juicing your carrots, place the carrot fiber in a large mixing bowl and fluff it around with a large fork to get rid of any carrot chunks.  DO NOT STIR the fiber as this will make it get mushy.  It should be perfectly flakey like the texture of tuna.  Add in your dry spices, Old Bay, kelp, shredded seaweed, veggies and fluff again.  Add in your Veganaise and mix well.
