Buffalo Sauce
3 T tomato puree
1 T orange juice
¼ cup hot sauce I like Texas Pete
1 T plum sauce
Mix together.
Celery Salad
1 cup sliced celery
ranch dressing
Toss celery in ranch dressing to your liking
Blue Cheese Sauce
¼ cup milk
2 oz cream cheese
1/3 cup blue cheese crumbles
1 tsp corn starch
Scald milk. Add cream cheese and melt. Mix starch with the blue cheese. Stir in and melt. Pour over Nacho's
Assemble
1 bag mixed color thick corn tortillas
2 cups cooked pulled or chopped chicken
Warm chips in oven for 1 minute. Pour chips on a platter. Toss chicken in a bowl. Coat heavily with the Buffalo Sauce. Spread over chips. Drizzle with blue cheese sauce. Garnish with pickled peppers. Garnish platter with celery salad. You can serve celery sticks as an alternative. If grilling the chicken marinate in a little sauce for a minimum of 3 hours. Serve and Enjoy!!!!!
