Triple Chocolate Pudding

Yield:  15 Servings

8"-9" round deep sided glass dish is needed or small single serving glasses

 

Milk Chocolate

¼ cup cornstarch

¼ cup sugar

pinch salt

2 ½ cups milk

6 oz milk chocolate coarsely chopped

In a pot combine sugar, cornstarch, salt and milk.  Heat over low heat stirring constantly with a heat proof rubber spatula.  If lumps start to form remove from heat and use a whisk to break them up.  When the mixture starts to thicken (coats the back of a spoon) add the chocolate.  Cook and stir until smooth.  If there are a few lumps it can be strained.  Pour into the glass dish.  Place in the refrigerator for several hours until set. 

 

White Chocolate 

¼ cup corn starch

¼ cup sugar

pinch salt

2 ½ cups milk

6 oz white chocolate coarsely chopped

In a pot combine sugar, cornstarch, salt and milk.  Heat over low heat stirring constantly with a heat proof rubber spatula.  If lumps start to form remove from heat and use a whisk to break them up.  When the mixture starts to thicken (coats the back of a spoon) add the chocolate.  Cook and stir until smooth.  If there are a few lumps it can be strained.  Place pudding in and ice bath and cool slightly to luke warm.  Pour into the glass dish over the milk chocolate pudding.  Place in the refrigerator several hours until set. 

Dark Chocolate

¼ cup corn starch

¼ cup sugar

pinch salt

2 ½ cups milk

6 oz dark chocolate 70% coarsely chopped

In a pot combine sugar, cornstarch, salt and milk.  Heat over low heat stirring constantly with a heat proof rubber spatula.  If lumps start to form remove from heat and use a whisk to break them up.  When the mixture starts to thicken (coats the back of a spoon) add the chocolate.  Cook and stir until smooth.  If there are a few lumps it can be strained.  Place pudding in and ice bath and cool slightly to luke warm.  Pour into the glass dish over the white chocolate pudding. Pour into the glass dish.  Place in the refrigerator for several hours until set. 

Top with whipped cream and shaved chocolate.  Use a peeler on the side of a chocolate bar to get shavings.  Serve and Enjoy!!!!!
