Crab Stuffed Avocado

Makes 8 servings


Crab                                  12 ounces

Mayonnaise                            ½ cup

Olive Oil                             2 teaspoons

Vinegar                               1 teaspoon

Salt                                  1 teaspoon

Avocados, halved, peeled                   4 each

Paprika                               ¼ teaspoon

Fresh Black Pepper                    ¼ teaspoon

Green Olives                          8 each

Red Pimientos                         4 each

Method of Preparation

1. Gather all ingredients and equipment

2. Mix vinegar, oil, paprika, salt and pepper

3. Marinate the avocados in the mix

4. Place in refrigerator

5. Mix crab well with the mayonnaise

6. Fill each avocado half with crab mixture

7. Decorate with olives and pimentos
