Goat Cheese Scalloped Potatoes

serves 4

1 Idaho potato sliced 1/8" thick using a mandolin

1 sweet potato sliced 1/8"thick using a mandolin

1 T chopped garlic

2 cups milk

2 tsp salt

1 tsp ground black pepper

6 oz goat cheese

Mix potatoes together.  Mix milk, garlic, salt and pepper separately.  In a 6"x 6" baking pan shingle ½ the potatoes evenly over the bottom.  Sprinkle with ½ the goat cheese.  Evenly spread the remaining potatoes on top.  Pour milk over the top.  Cover with aluminum foil and bake 1 hour @ 350*.  Remove foil, sprinkled with remaining crumbled goat and bake 20 cheese min or until tender and browned on top.  Cut in four and divide on plates, transfer to a serving platter or serve as is.
