Serves 2
½ cup mashed potatoes
½ cup leftover cooked turkey meat
1 tsp chopped rosemary
salt and pepper
2 eggs
¼ cup gravy warmed
In a bowl mash or chop turkey fine. Mix in potatoes and rosemary. Season with salt and pepper. Form into 2 patties. Pan fry until golden and heated through. Place in a 350* oven if needed. Fry eggs to your liking and place on top of cake. Drizzle with warm gravy. Serve and Enjoy!!!!!
This mix can be made into meatball shapes. Take the meatballs and double bread them. First in egg wash, then bread crumbs, then egg and then again in crumbs. Deep fry or deep pan fry until golden. Serve with gray or mustard. Use corn flake crumbs if wanting gluten free.
